SQUASH CASSEROLE 
4-5 strips bacon
1 lg. onion, chopped
1 lb. shredded raw squash
1 c. fine bread crumbs
3/4 c. milk
1 tsp. salt
1/8 tsp. pepper
1 c. grated sharp cheddar cheese

Preheat oven to 350 degrees. Fry bacon and drain. Saute onion in small amount of bacon drippings. Crumble bacon and mix with onion, squash, bread crumbs, milk and seasonings. Add cheese, saving a bit to sprinkle on top. Put in buttered 2 quart casserole and bake about 1 hour. Serves 6. (This is from the Art of Southern Cooking.)
