FRESH MUSHROOM SOUP 
1 lb. fresh mushrooms, chopped fine
2 tbsp. butter
2 shallots or 1 onion, chopped fine
4 cans chicken broth
1/2 tsp. salt
1 tsp. lemon juice
Lemon slices

Wash dry and chop mushrooms. Heat butter in saucepan, add shallots, cook and stir about 3 minutes. Add mushrooms, cook and stir 5 minutes. Add broth, salt and lemon juice. Simmer for 30 minutes. Serve lemon slices as garnish.
