4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese, grated
2 pkgs. frozen, chopped spinach, thawed and drained

Preheat oven to 350 degrees. In a 9 x 13 inch baking pan, melt the butter in the oven. Remove from oven. In a large mixing bowl, beat the eggs, then add the flour, milk, salt, and baking powder. Mix well. Add the cheese and spinach. Pour into baking pan. Bake in oven for 35 minutes. Remove from oven. Cool for 45 minutes. Cut into bite-sized squares.
