SPINACH QUICHE 
Pastry shell
1 pkg. frozen chopped spinach
6 eggs
3 oz. cream cheese
1/2 c. almonds
1/4 c. sharp Cheddar cheese
3 green onions, finely chopped
3 tbsp. parsley
3 tbsp. cheese
1/2 tsp. salt
Dash of pepper
1 lg. tomato, cut in wedges

Cook spinach; drain. Combine eggs, cream cheese, and Cheddar cheese. Stir in spinach, almonds, green onions, parsley, salt, and pepper. Pour into shell. Sprinkle with 2 tablespoons Parmesan. Bake at 425 degrees for 15 minutes. Top with tomato and other tablespoon of Parmesan. Bake 4 minutes more. Let stand 10 minutes before serving.
