TO FRY EGGPLANT 
Cut the eggplant into thick slices, carefully paring each piece. Throw it in salt water and let it remain there several days. Take from the water; drain and wipe. Then butter the slices of eggplant, dip in beaten egg, then in grated crackers and fry a light brown. Pepper, grate more cracker over them and serve.
