SPLIT PEA SOUP 
1 ham bone with lots of meat on bone or 3 lbs. of ham hocks, split
1 onion
12 c. boiling water
2 or 3 carrots, grated
2 or 3 potatoes, diced
1 lb. split peas
Black pepper to taste
Salt if needed
1 clove garlic

Place ham bone in heavy Dutch oven, cover with the water, bring to boil, reduce heat and simmer 1 hour. Add split peas, onion, carrots and potatoes. Simmer 1 hour longer, then add black pepper, garlic and salt if needed. Simmer 1 more hour and serve.
