HOME CANNED APPLE PIE FILLING 
4 1/2 c. granulated sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. lemon juice
2-3 drops yellow food coloring, optional
5 1/5-6 lb. apples, sliced

In large saucepan, blend first 4 ingredients and 1 teaspoon salt. Stir in 10 cups water. Heat until thickened and bubbly, stirring. Add lemon juice and food coloring. Pack raw apples sliced into hot jars, leaving 1 inch head space.

Fill jars with hot syrup, leaving 1/2 inch head space.

Process in a boiling water bath for 20 minutes for quarts, 15 minutes for pints.

When using in pie, put in unbaked pie shell. Bake at 400 degrees for 50 minutes.
