TOMATO AND CHEESE POTATOES 
1 (16 oz.) pkg. frozen hash browns, thawed
1 tomato, chopped
1/2 c. chopped onion
Some basil
Salt & pepper
1 c. shredded Mozzarella
1/4 - 1/2 c. milk

Grease an 8" square pan, well. Layer 1/2 of potatoes, tomatoes, onion, seasonings and cheese. Repeat ending with cheese. Bake, covered 20 minutes at 450 degrees and bake, uncovered 5 minutes more.
