SEMI - SWEET CHOCOLATE CAKE 
16 oz. semi-sweet chocolate bits
1 tsp. hot water
1 1/2 tsp. all-purpose flour
1 1/2 tsp. sugar
1/2 c. butter, melted
4 eggs, separated
1 c. whipping cream, whipped
Grated chocolate

Grease bottom of 8-inch spring form pan. Line with waxed paper and grease paper; set aside. In small saucepan, melt chocolate bits in water over low heat, or melt in small bowl in microwave. Beat in flour, sugar, and butter. Add egg yolks one at a time, beating well after each addition until batter is smooth.

In separate bowl, preferably copper, whisk egg whites until stiff peaks form. Fold large spoonful into chocolate mixture, then fold chocolate mixture into remaining egg whites.

Pour mixture into prepared pan and bake at 350 degrees for 15 minutes. Cake will look uncooked in center. Cool in pan on wire rack. Remove from pan; remove paper and wrap well with plastic wrap. Chill or freeze.

When ready to serve, slice cake with hot knife into 8 wedges, leaving cake whole. Spread very thick layer of whipped cream over top of cake. Smooth; sprinkle with grated chocolate. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Number one rule to chocolate. NEVER use water with melted chocolate. It will make it grainy.
