SPINACH LOAF 
1/4 c. Parmesan cheese, grated
1-2 cloves garlic, minced
1 sm. onion, minced
2 tbsp. olive oil
6-7 slices whole wheat bread (or white)
1-2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained
Tomato sauce (opt.)

Saute garlic and onion in oil until tender. Grind the whole wheat bread in blender, add to garlic and onion mixture with drained spinach. Add grated cheese. Mix all together and shape into loaf. Top with tomato sauce, if desired. Bake in oven at 350 degrees for about 25 to 30 minutes.
