TOASTED COCONUT OATMEAL CAKE 
1 1/4 c. boiling water
1 c. oatmeal
1 stick butter
1 c. brown sugar
1 c. white sugar
1 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/3 c. flour
1 tsp. baking soda
2 eggs
1 c. brown sugar
1 c. coconut
1/3-1/2 c. milk evaporated
3-4 tbsp. butter
1/2 tsp. vanilla
1/2 c. pecans, chopped

Boil water and add first cup of oatmeal and 1 stick butter. Stir and set aside. Mix 1 cup brown sugar, white sugar, cinnamon, baking powder, salt, flour and soda together; then add eggs. Add oatmeal to mixture and cook in a greased pan 30-35 minutes on 350 degrees.

For topping mix the other cup of brown sugar, coconut, milk, butter, vanilla and pecans; spread over cake as soon as it comes out of the oven. Turn oven to broil and brown topping in broiler.
