POTATO CROQUETTES 
2 1/2 lbs. russet potatoes
1 cup grated Parmesan cheese
4 eggs, separated
1 Tbsp. chopped parsley
2 Tbsps. finely chopped onion
Salt and pepper to taste
2-3 cups cracker crumbs or potato chips, crumbled
Fresh parsley

Boil potatoes in skins until tender. Peel and mash while warm. Add cheese, egg yolks, parsley, onion and salt and pepper to taste. Mix very well. Take 2-3 tablespoons of mixture to form into cylindrical rounds or patties if you prefer. Lightly beat egg whites with 2 tablespoons of water. Coat croquettes or patty in egg whites and then roll in cracker or potato chip crumbs. Repeat process if heavier coating is desired. Fry immediately in hot oil until golden brown. Serve hot.

SPECIAL NOTE: Once formed and breaded, the croquettes or patties may be frozen and fried in oil at a later date. This becomes a very easy item to have on hand and prepare with many main entrees. Great item to have on board while cruising.
