SPICED SUGAR PECANS 
4 c. pecan halves
1 egg white
1 c. sugar
1/2 tsp. salt
1 1/2 tsp. cinnamon

Put egg white and salt in bowl. Beat until frothy. In 2nd bowl, put sugar and cinnamon. Put pecans in egg white mixture and stir until all are coated. Pour sugar mixture over them and stir well. Grease 2 cookie sheets with vegetable fat. Place flat side of nuts down. Bake at 250 degrees for 15 minutes. Turn off heat and leave in oven 10 minutes. Remove from oven and let stand 1 minute. Loosen with spatula. When cool, separate nuts.
