MEXICAN RELISH 
1 cucumber, peeled & chopped
3 ripe tomatoes, chopped
1 sm. onion, chopped
1/2 c. green onion tops, chopped
1 green pepper, chopped
2 carrots, grated
1/2 c. salad oil
2 tsp. salt
1/2 tsp. pepper
1 c. ketchup
1 sm. can mild chilies
2 tbsp. chili powder
1 tbsp. cumin
1/4 c. chopped cilantro
1/2 c. lemon juice
2 tbsp. sugar

Mix all ingredients. Refrigerate at least 1 hour. Good with any Mexican dishes or as a side salad served on a lettuce leaf.
