PUMPKIN BREAD 
In a large bowl, mix the following:

4 beaten eggs
2 c. (1 lb. can) pumpkin
1 c. cooking oil
2/3 c. water
3 c. sugar

Sift and add to the above mixture:

3 1/3 c. self-rising flour
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsp. salt
1 tsp. vanilla flavoring

Grease and flour 2 large or 3 small loaf pans. Fill pans about 2/3 full (leave room for the bread to rise). Bake 1 hour at 350 degrees. Let stand in pan to cool for 5 minutes. Turn out on wire rack. This bread is delicious served hot or cool and also freezes well.
