OATMEAL BANANA NUT BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas
1 1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. 3-minute quick oats
3/4 c. chopped pecans
1/2 tsp. butter or vanilla flavoring

Cream shortening and sugar well. Add eggs, one at a time, mixing thoroughly after each addition. Add bananas and mix well. Sift flour, soda and salt. Add with oats to creamed mixture. Stir in nuts and flavoring. Pour batter into greased 9x5 inch loaf pan and bake at 350 degrees for 50 to 55 minutes or until an inserted toothpick comes out clean.
