RICOTTA COOKIES 
1/2 c. butter
1/2 c. Ricotta cheese
1/2 tsp. vanilla
1/2 tsp. lemon extract
1 egg
1 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 oz. candied cherries, sliced
4 oz. candied pineapple, chopped

Cream butter, blend in cheese, add sugar, egg and flavoring. Beat well, then add flour, soda, salt. Fold in chopped pineapple. Drop from teaspoon on greased cookie sheet. Bake at 375 degrees for 15 minutes. Garnish with candied cherry slice.
