BANANA CUPCAKES 
3 ripe bananas, broken
2 c. sifted flour
1/4 tsp. baking powder
1/2 c. soft shortening
1 1/2 c. granulated sugar
3/4 tsp. baking soda
3/4 tsp. salt
2 unbeaten eggs
1/4 c. sour milk
1 tsp. vanilla

Cream shortening, sugar, eggs and vanilla. Add dry ingredients, milk and mashed bananas. Beat 2 minutes. Pour batter into pans, filling not more than 1/2 full.

Sprinkle each cupcake with ground nuts, if desired. Bake at 350 degrees for 20 minutes or until done.
