FRESH APPLE CAKE | |
1 1/4 c. cooking oil 2 lg. or 3 sm. eggs 2 tsp. baking powder 1 tsp. vanilla 1 c. nuts or coconut (optional) 3 c. raw apples, chopped finely with peels 2 c. sugar 1 tsp. salt 1 tsp. baking soda 2 1/2 c. flour Mix well all ingredients, adding apples last. Bake at 350 degrees for approximately 1 hour. Check at about 45 minutes. CARAMEL FROSTING: 1/2 c. butter 1 c. brown sugar, firmly packed 2 tbsp. milk 1/2 tsp. salt Melt butter and brown sugar and then add other ingredients. Add enough confectioners' sugar to make consistency to spread on cake when cooled. |
