EASY APPLE OR RHUBARB CAKE 
1/2. shortening, butter
1 1/2 c. sugar
1 egg
1 c. milk or buttermilk
1 tsp. baking soda
Pinch of salt
2 c. flour
2 c. apples or rhubarb, cut into small pieces

Cream shortening, sugar, egg and vanilla; add milk. Then add flour, soda and salt. Mix well. Add apples or rhubarb. Pour into greased 9 x 13 inch cake pan. Add topping: 1/2 cup sugar and 1 teaspoon cinnamon. Bake 1 hour, or until done, at 350 degrees.
