ROSIE'S ANGEL FOOD CAKE | |
1 c. egg whites (8-10 eggs) 1 1/4 c. sugar 1 c. cake flour (only) 1 tsp. cream of tartar 1/8 tsp. salt 1/2 tsp. orange flavoring 1/2 tsp. vanilla 1 tbsp. water Sift flour and sugar separately 1 or 2 times. Measure each after sifting. Beat egg whites about 2 minutes. Add salt, water and flavorings. Sift in cream of tartar. Continue whipping until whites are stiff, not dry, when you run a spatula through them. Sift sugar into whites 1/4 at a time. Fold each 1/4 in with 10 strokes (use spatula). Do flour the same way 1/4 at a time. Be sure all flour is mixed in. It may take more than 10 folds the last time, be gentle. Pour into unoiled tube pan. Bake in 325 degree oven for 50 minutes until light golden brown. (If you don't have cake flour, measure the 1 cup and take out 2 tablespoons sift.) |
