TABBOULI SALAD | |
1 c. cracked bulgur wheat, uncooked 2 c. boiling water 1/2 c. vegetable or olive oil 1/2 c. lemon juice 2 tsp. salt 1 tsp. pepper 1/2 c. parsley, chopped 1/4 to 1/2 c. fresh mint leaves, chopped 1 bunch green onions & tops, finely chopped 2 tomatoes, seeded & diced Pour boiling water over the bulgur wheat and let stand 1 hour. Drain well and squeeze out all water and put in bowl. Add remaining ingredients and blend well. Chill at least two hours. Serve on lettuce or in pita bread. Serves 6. |
