SZEKELY GULYAS (PORK GULYAS WITH SAUERKRAUT) | |
2 lb. pork, cubed 1 lg. minced onion 3 tbsp. shortening 1 lg. can sauerkraut 1/2 pt. sour cream Paprika Salt and pepper Saute onion in shortening. Add the meat which has been cut into 1-inch squares and dredged in flour, salt, pepper, and paprika mixture (best if shaken in a plastic bag). Cook over low heat until the meat has been browned, taking care not to burn the flour. Add water to cover and simmer until meat is fairly well cooked, about an hour. Add sauerkraut (if you prefer milder sauerkraut flavor, rinse before adding making certain you have squeezed out excess water). Cook until sauerkraut is browned (about another half hour) and before taking from the stove, add the sour cream. Serve. |
