GRAHAM CRACKER-COCONUT SANDWICH
COOKIES
 
2 sticks butter
1 c. sugar
1/2 c. evaporated milk
1 c. graham cracker crumbs
1 1/2 c. coconut
1 c. nuts
Whole graham crackers

FROSTING:

2 c. powdered sugar
1/3 stick butter
1/2 tsp. vanilla

Bring to a boil and stir constantly the butter, sugar, and evaporated milk. When it starts to boil, add graham cracker crumbs, coconut, and nuts. Cook until thick. Line large cookie sheet with whole graham crackers. Pour mixture over all the crackers and top with another graham cracker.

FROSTING: Add enough evaporated milk to powdered sugar, butter, and vanilla to make a thin frosting. Frost and let set until cold. Cut in squares by cracker lines.
