U.S. SENATE BEAN SOUP 
2 c. dry white beans
1 ham bone
2 tsp. salt
1 diced carrot
3 onions, finely chopped
1 clove garlic
1 bay leaf
12 c. water
1/4 tsp. pepper
1 c.mashed potatoes (instant)
1/4 c. parsley
1 1/2 c. celery
1 (6 oz.) can tomato sauce

Put ham bone, soaked beans, and water in covered pot and simmer for 1 hour. Add mashed potatoes and stir well. Continue to simmer for another hour. Add onions, celery, garlic, parsley and tomato sauce. Remove ham bone. When cool enough to handle, remove ham from bone and return to soup. Simmer until beans are done. If soup is not thick enough, add more instant potatoes. Makes 3/4 gallon.
