CRANBERRY CAKE | |
2 1/4 c. flour 1 c. sugar 1/4 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 c. chopped walnuts 1 c. chopped dates 1 c. whole fresh cranberries Grated peel (2 oranges) 2 eggs, beaten 1 c. buttermilk 1/2 c. oil GLAZE: 3/4 c. sugar Juice squeezed from 2 oranges Mix in a large bowl, flour, sugar, salt, powder, and soda. Stir in nuts, dates, cranberries, and orange peel. Combine eggs, buttermilk, and oil. Stir into flour mixture until mixed well. Pour into a well greased 10 inch tube pan. Bake at 350 degrees for 1 hour. Let stand 15 minutes. Remove from pan and put on rack over a pan. Heat sugar and orange juice until dissolved. Pour over cake several times. Cover and refrigerate 24 hours. Serve with whip cream. |
