CREAM OF BROCCOLI SOUP | |
10 oz. pkg. frozen broccoli, chopped style 1/2 c. chopped onion 2 tbsp. butter 2 c. milk (or skim milk) 2 c. cottage cheese 1 tbsp. flour 1/4 tsp. marjoram 1/4 tsp. salt Saute onion in butter; blend in flour, add milk gradually, stirring constantly. Add remaining ingredients and cook about 10 minutes until piping hot. This is a chunky, filling soup, add a salad and some Italian or French bread and you've got a meal. Also, if made with skim milk, it's only about 115 calories a bowl. Quick, delicious and low calorie, too. You can't beat that. Can be doubled for a large group. |
