FRESH STRAWBERRY PIE 
1 qt. strawberries
1 c. sugar
1/2 c. water
3 tbsp. cornstarch
1 tbsp. lemon juice
Few drops red food coloring

Stem strawberries. Mash 1 cup strawberries, sugar, water and cornstarch. Mix and boil until thick and clear. Remove from heat and add lemon juice and food coloring. Cool. Put a little filling to cover the bottom of a baked pie shell. Put the rest of the berries in the pie shell (slice if really large). Put rest of cookie mixture on top. Refrigerate. Serve with Cool Whip or whipped cream.

PASTRY:

1 1/2 c. flour
1/2 tsp. salt
1/2 c. shortening
4 tbsp. cold water

Sift flour and salt; add shortening. Cut in with pastry blender. Add water until flour and shortening mixture are barely dampened. Turn out on waxed paper. Refrigerate. Roll 1/8" thick. Put in pan. Crimp edge, prick bottom with a fork. Bake in a preheated oven, 450 degrees, 10 to 15 minutes.
