LEMON PUDDING 
1 pkg. lemon flavored Jello
1 1/4 c. boiling water
1 (14 oz.) can sweetened condensed milk
1 tsp. finely grated lemon rind

Place the Jello in a large serving bowl and pour over the boiling water. Using a wooden spoon, Stirr until the Jello has dissolved. Sti in the condensed milk and lemon rind and, using a wire whisk, beat until the mixture becomes light and frothy. Place the bowl in the refrigerator for 3-4 hours to set.
