POOR MAN'S CASSEROLE | |
1 c. dairy sour cream 1/4 c. chopped onion 2 tbsp. butter (1 tbsp. melted) 2 tbsp. all-purpose flour 1/2 c. milk 3 oz. shredded sharp cheese 2 tbsp. snipped parsley 1/2 tsp. salt 1/8 tsp. pepper 1/8 tsp. paprika 3 c. potatoes, cooked, pared & sliced 4 hard-boiled eggs, sliced 2 tomatoes, peeled & sliced thinly 3/4 c. soft bread crumbs Preheat oven to 350 degrees. Cook onion in 1 tablespoon butter until tender. Blend in flour. Stir in sour cream, milk, cheese, parsley, salt, pepper and paprika over low heat until cheese melts. Add potatoes. In separate 1-1/2- quart casserole dish, pour in half of the potato mix. Top with egg and tomato. Spoon remaining potato mix on top. Combine bread crumbs and other 1 tablespoon butter. Sprinkle on top of casserole. Bake for 40 to 50 minutes. Serve warm. |
