COCONUT CHESS PIE 
4 eggs, beaten
1 1/2 c. sugar
1/2 c. butter, melted
1 tbsp. vinegar
1 tsp. vanilla
1/4 tsp. salt
1 c. flaked coconut
1 unbaked 9 inch pastry shell
Toasted flaked coconut (optional)

Combine first 6 ingredients, beat well. Stir in coconut; pour into pastry shell. Bake at 325 degrees for 45-50 minutes or until set. Cool on wire rack. Garnish with toasted coconut if desired.
