FOUR FRUIT SHERBET 
1 c. mashed fully ripe bananas (2 to 2 1/2)
2/3 c. sugar (1/2 is enough)
1/2 tsp. grated orange peel
1/3 c. orange juice
1 tbsp. lemon juice
1 c. cranberry juice
6 drops red food coloring
1 stiff-beaten egg white

Combine mashed banana, sugar, orange peel, orange and lemon juice. Beat until smooth. Stir in cranberry cocktail and food coloring. Turn in 4 cup refrigerator tray and freeze until firm. Break into chunks in chilled bowl and beat until smooth with electric mixer. Fold in egg white and put in parfait glasses or paper souffle cups and freeze. Makes 6 to 9 depending on cups used. Take out from freezer short while before serving.
