EXOTIC CHICKEN OR TURKEY SALAD 
2 1/2 to 3 lb. chicken breasts or turkey, cubed
1 lg. can water chestnuts, sliced and mixed with chicken
2 c. sliced celery
2 lb. or less green seedless grapes
2 c. slivered toasted almonds
3 c. lite mayonnaise (use half and remainder with lowfat yogurt)
1 tbsp. curry powder (or to taste)
2 tbsp. soy sauce
1 lg. can pineapple chunks, drained

Add celery, grapes and half of toasted almonds to chicken and chestnut mix. Save remaining almonds to serve on top. Mix mayonnaise and yogurt with curry powder and soy sauce. Add to chicken mixture. Chill. Serve on lettuce. Sprinkle remaining almonds and pineapple chunks on top. Half of this recipe serves 6 easily.
