CARROT-SPICE CAKE (OR
APPLE-SPICE CAKE)
 
2 eggs
1/2 c. warmed honey or maple syrup
3/4 c. oil
1/4 c. buttermilk
2 tsp. vanilla
1 1/2 c. grated carrots
1/2 c. chopped nuts (pecans, almonds or walnuts)
1 c. raisins
1 1/4 c. whole wheat pastry flour
1 tsp. salt
1 tsp. baking soda
2 1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/4 tsp. ginger
1/4 tsp. nutmeg
1/8 tsp. allspice

Preheat oven to 300 degrees and grease an 8x8 inch pan. Beat eggs. Add honey, oil, buttermilk and vanilla. Stir in carrots, nuts and raisins.

In a separate bowl, sift together flour, salt, baking soda and spices. Fold into carrot mixture and mix well, but do not beat. Pour batter into prepared pan and bake in preheated oven for 1 hour.

If you like apple cake, switch the grated carrots with grated apples.
