FRESH STRAWBERRY JAM | |
4 1/2 c. crushed fresh strawberries, washed and stemmed 1 (1 3/4 oz.) box powdered fruit pectin 7 c. sugar Place berries and pectin in 5 quart casserole dish; stir well. Cover; microwave on high 8 to 10 minutes until mixture is at full rolling boil. Add sugar to boiling mixture and stir well. Uncover, microwave 8 to 10 minutes, stirring after 5 minutes, until mixture reaches full rolling boil. Then boil 1 minute. Skim off foam with metal spoon while stirring jam (about 5 minutes) before ladling into sterilized glasses. Seal with 1/8 inches of paraffin; let set and seal with another 1/8 inch. Paraffin: Set paraffin in small batter bowl placed in large batter bowl with water. Boil in microwave until melted. |
