FRESH STRAWBERRY JAM 
1 pt. (12 oz.) ripe strawberries, rinsed, drained, hulled and quartered (2 1/2 c.)
3/4 c. granulated sugar
2 tsp. freshly squeezed lemon juice

Mix strawberries and sugar in a 3 quart bowl. Microwave uncovered on High 11 to 14 minutes, stirring once after 3 minutes, until thickened. (Jam will bubble up to but not over top of bowl.) Stir in lemon juice. Ladle into a hot, clean jar or airtight container. Cover; cool before serving or refrigerate. Store tightly covered in refrigerator. Makes 1 cup.

Since microwave ovens vary in power, you may need to adjust your cooking time.
