SOUR CREAM & BREAD CRUMB
FLAPJACKS
 
1 c. toasted fresh non-sweet white bread crumbs
4 tbsp. melted butter
1 egg
1/2 c. Wondra or instant blending flour
1/2 c. sour cream
1/2 c. or more milk
1/2 tsp. double acting baking powder
Salt & pepper

To make toasted bread crumbs, crumb fresh bread in blender and spread in roasting pan at 350 degree oven for 15 to 20 minutes. Toss in a frying pan with melted butter over moderate heat.

Blend egg, flour, sour cream, 1/2 cup milk and baking powder in a 4 cup measure. Fold in crumbs and salt and pepper to taste. Stir in more milk in driblets if you think it's necessary. Drop batter on a buttered hot skillet and cook pancakes, turning when bubbles appear.
