GREAT CHICKEN CASSEROLE 
2 c. diced cooked chicken
3/4 c. mayonnaise
1 c. diced celery
1 c. cooked rice (cooked in chicken broth)
1 tbsp. lemon juice
1+ tbsp. grated onion
1 (3 1/2 oz.) can mushrooms, drained
1/2 c. sliced almonds, toasted
1 c. crumbled Ritz crackers
3 tbsp. butter

Mix first 9 ingredients in greased 2 quart casserole. Sprinkle crackers and butter over top. Bake 30 minutes at 350 degrees.
