HAM LOAF
THE LOAF:

1 lb. ground ham
1/2 lb. ground pork
1/2 tsp. salt
3/4 c. milk
1/2 c. quick oats
Dash of pepper
1 egg

BAKING SAUCE:

1/2 c. brown sugar
1 tbsp. wine vinegar
1/4 tsp. dry mustard
Water

GLAZE: (to serve it with)
1/4 c. brown sugar
1 1/2 tbsp. cornstarch
1/4 c. raisins
1 stick cinnamon
Dash of ground cloves
1 c. apple cider
1 tbsp. butter

Combine all the ingredients for the loaf. Shape into a loaf shape (or whatever shape you want) on a 13 x 9 inch glass pan or cookie sheet. Do not pack into a loaf pan. Make the baking sauce using just enough water to make into a thick glaze. Cover the top of the loaf with this thick glaze-sauce letting it run down the sides. Bake at 350 degrees for 45 to 60 minutes. Cook the serving glaze in a small saucepan for about 10 minutes, stirring constantly. Remove the stick of cinnamon before serving. Note about the apple cider: you can buy it and freeze it in 1 cup increments to use even when apple cider is out of season. Serve the ham with the glaze on the side.
