DAVID'S PESTO SAUCE 
1/2 oz. walnuts, about 1/8 cup
2 bunches basil, cleaned and stems removed
1 cup olive oil
2 Tbsps. butter
1 3/4 tsps. minced garlic
1/2 tsp. nutmeg
1/4 tsp. red pepper flakes
1/2 tsp. coarse black pepper
1/2 tsp. white pepper
1/4 cup grated Romano cheese
1/4 cup grated Parmesan cheese
1/2 cup pine nuts, toasted
Angel hair pasta

In a blender or food processor, combine the walnuts, basil and olive oil, processing until finely chopped. Add butter, garlic, nutmeg, red, black and white pepper and process briefly. Stir in cheese. Let mature at least 24 hours in refrigerator before using. Use pine nuts for garnish. Makes about 3/4 cup. Serve over angle hair pasta.
