STUFFED RIGATONI 
1 lg. onion, chopped
2 cans tomato paste
2 tbsp. olive oil
1 lg. can Italian plum tomatoes
4 c. water
1 tbsp. sugar
1/2 tsp. pepper
1 bay leaf
1/2 tsp. oregano

Saute onion in oil. Add remaining ingredients and simmer. 2 lbs. sausage, Italian if desired 1 1/2 c. dry bread crumbs 2/3 c. milk 2 eggs 2/3 c. Parmesan cheese

Cook rigatoni; drain; cool. Brown sausage; add remaining ingredients. Stuff rigatoni with meat mixture. Layer in large casserole. Pour some sauce over each layer. Bake 350 degrees, 35-45 minutes.
