BROWN RICE CASSEROLE 
1 1/2 c. water
1/2 c. brown rice
2 egg whites
1/2 c. sliced green onions
1/2 c. chopped walnuts
1/4 c. fine dry bread crumbs
1/2 tsp. dried thyme
1/4 tsp. dried basil
Several dashes ground red pepper

Cook rice in water for 45 minutes. In bowl combine egg whites, cooked rice, green onions, chopped walnuts, bread crumbs, thyme, basil and red pepper. Press into a pie plate to form a crust.

Combine: 1 (15 1/2 oz.) can red kidney beans, drained 1 (8 oz.) can no salt tomato sauce 1 tsp. chili powder 1 c. shredded lowfat cheese

Spread the kidney bean mixture over rice crust. Top with cheese. Bake for 30 minutes in 350 degree oven.
