BOILED RAISIN CAKE 
1 box raisins
1 c. butter or 2 sticks butter
2 c. sugar
1 c. boiling water
1/2 c. extra strong coffee

Mix above ingredients and let simmer a few minutes. Turn off. Add 1 teaspoon salt and 1 tablespoons soda; let cool thoroughly. Add: 1/2 tsp. allspice 1/4 tsp. nutmeg 2-3 tbsp. cocoa or 12 Hershey's kisses 4 c. sifted plain flour 1 tsp. cinnamon 1/2 c. applesauce 1-2 c. pecans, toasted

Bake 2 hours real slow at 275-300 degrees (or at 275 degree for 1 hour, then ad 325 degrees for 1 hour.)

CREAM CHEESE FROSTING: (optional)
1 (3 oz.) cream cheese
1 tbsp. soft butter
1 tsp. vanilla
2 c. sifted powdered sugar

Mix together and pour over cake.
