MARINATED POTATO SALAD 
3 lbs. (about 9 med.) potatoes, boiled and peeled
1 tbsp. chopped chives
1 tbsp. sugar
2 tsp. salt
1/2 tsp. cracked pepper
2/3 c. salad oil
1/4 c. cider vinegar

About 3 hours before serving or earlier, into large bowl, slice potatoes very thinly. In small bowl, mix remaining ingredients. Pour over potatoes, stirring to coat completely. Cover and refrigerate at least 2 hours to chill thoroughly. Makes about 8 servings.
