SEAFOOD NEWBURG 
6 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/8 tsp. nutmeg
3 egg yolks
2 c. Half and Half
1 c. milk
1 (12 oz.) pkg. frozen cooked lobster meat, thawed (2 c.)
1 lb. cooked, shelled, deveined shrimp
3 tbsp. med. sherry (optional
Heated patty shells or toast points

About 20 minutes before serving: in 12-inch skillet, over medium-high heat, into hot butter, stir flour, salt and nutmeg until blended. In medium bowl, with fork, beat egg yolks slightly and stir in Half and Half and milk; stir into flour mixture ad cook, stirring constantly, until mixture is thickened. Add next three ingredients; cook until heated. Serve on patty shells.

Makes 6 servings.
