6 tbsp. butter 3 tbsp. flour 1/8 tsp. nutmeg 3 egg yolks 2 c. half and half 1 c. milk 1 (12 oz.) pkg. frozen lobster or crab meat 1 lb. cooked and cleaned shrimp 3 tbsp. sherry (optional) Twenty minutes before serving: In 12 inch skillet over medium high heat, melt butter. When hot, stir in flour and nutmeg until blended. In medium bowl, with fork, beat egg yolks slightly and stir in half and half and milk; add to flour mixture and cook, stirring constantly, until mixture is thickened. Add next three ingredients; cook until heated. Serve on a bed of rice or pasta. Serves 6. |
