SEAFOOD NEWBURG 
1 c. mushrooms
4 tbsp. butter
2 egg yolks
1/4 tsp. paprika
1 c. chicken broth
204 c. fish (lobster, crab)
4 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 c. light cream
2 tbsp. sherry

Heat oven to 450 degrees. Saute mushrooms in butter. Blend in flour and seasoning. Cook over low heat until bubbles. Remove from heat. Stir in cream (fast) and chicken broth. Back on heat. boil 1 minute. Take off heat and add yolk (fast), wine, fish. Put in casserole. Add crunched Ritz crackers and melted butter. Bake 10 minutes.
