EGG FOO YUNG 
6 eggs
4 onions, thinly sliced
3/4 c. frozen peas
1 c. chopped mushrooms
1 1/2 c. bean sprouts
1 tbsp. soy sauce
2 tbsp. oil

In large bowl beat eggs. Add remaining ingredients, except oil. Heat oil in skillet. Ladle 2 tablespoons of mixture into pan and fry. When pancakes are brown on one side, turn over, and brown other side. Serves 4 to 6.
