EGG FOO YUNG 
1/2 lb. ground beef
3/4 c. finely chopped onions or scallions
1/4 c. finely diced celery
1 c. canned (drained) or 2 c. fresh bean sprouts
6 eggs, well beaten
1 tsp. salt

Shape ground beef into patties and brown in skillet. Can be made on an electric griddle or frying pan. Combine in bowl, onion, celery, bean sprouts, eggs, and salt. Add beef to egg mixture. Heat 2 tablespoons fat in a skillet. Fry by 1/4 cupfuls. Keep patties shaped with pancake turner by pushing egg back into patties. When set and brown on one side turn over and brown other side. Serve hot with rice and sauce.
