MEXICAN AVOCADO DIP 
3 med. size avocados
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 c. sour cream
1/2 c. mayonnaise
1 pkg. (1 1/4 oz.) taco seasoning mix
2 cans (10 1/2 oz.) jalapeno bean dip
1 c. chopped green onions with tops
2 c. coarsely chopped seeded tomatoes
2 cans (3 1/2 oz. each) chopped ripe olives
1 8 oz. pkg. shredded sharp cheddar cheese

Peel, pit and mash avocados and mix with salt, pepper and lemon juice. Combine sour cream, mayo and taco seasoning.

To Assemble: Spread bean dip in the bottom of a casserole dish. top with avocados, follow avocados with sour cream mixture. Sprinkle on onions, tomatoes and olives. Top with cheese.

Serve chilled or room temperature with Tostitos. BON APPETIT!!!!!
